Question sir, what kind of a "recipe" are you using for your fermenting apples?

Just a simple cider recipe. I got it from one of the guys from Norther Brewer and did a little adaptation based on a couple other recipes.

I fresh squeezed our own and then pasteurized (boiled and used Irish moss) about 4.5 gal. I added some brown sugar but not much. For yeast, I used a english cider yeast (Wyeast IIRC). I let it sit in primary for a bit over a week and now it in secondary. Went I bottle, I will backsweeten with about 1/2 gal of fresh cider (saved in the freezer). I am not planning on pasteurizing the bottles after conditioning... I really do not expect horrible carbonation and would rather leave it as is.
