would a mountaineer have carried both types of knives,or one or the other.

Both and probably more. I wouldnt limit a mountman's knives to just a butcher and scalper when he would have needed a set for skinning, a smaller utility nife and maybe even a folding pocket knife.

Don't forget some extra knives for trading with the Indians---they didn't just give away those horses. A horse wreck or two can make a person loose alot of gear, especially small items----knives seem to be prone to that sort of thing.
